Light and airy crepes you haven't tried before.
In a bowl add the eggs, protein powder and vanilla. Mix everything with a hand mixer until well combined
In another bowl add the egg whites and beat them until fluffy. Then combine gently with a spatula the 2 mixtures.
Heat up a non-stick pan on medium heat and add in some coconut oil. Once the pan is hot enough add in 2 tbsp of the mixture and spread it evenly with a spoon on a pan. You have to spread the mixture over the pan because the texture of it is fluffy so it will not spread itself.
Cook on one side for 2-3 minutes and then flip on the other side and cook for an extra 30 seconds.
Once you are done with the whole mixture and all of the crepes are done, stuff them with some cottage or ricotta lactose-free cheese and top with frozen blueberries.
