Egg breakfast wraps

Ingredients

  • 5 pasture raised eggs
  • 1/4 tsp salt & pepper
  • 1 tbsp olive oil
  • 200g mushrooms
  • 1/2 cup cherry tomatoes
  • 1/2 red bell pepper
  • 1/4 tsp lemon juice & salt
  • 3 corn tortillas

Instructions

  1. Cu the red bell pepper, lettuce, cherry tomatoes and mushrooms into chunks and then cut the avocado into slices. Add some lemon juice and salt on top of the avocado and set the veggies aside.

  2. Heat up a pan with the olive oil and in a mixing bowl put the eggs. Add in the salt and pepper. Once the pan is hot, add in the mushrooms and fry them for 5 minutes, then add the eggs and mix until they reach a creamy texture.

  3. Add one tortilla on to a plate and add eggs, veggies on top of it. Roll the wrap and repeat the process with the 2 other ones πŸ™‚

  4. In the end enjoy your lovely breakfast with your family.
