Vegan bolognese pasta

I don’t’ really like the original bolognese as a dish because the meat is just too chewy and hard to digest. However, I do love the sauce form the dish and once I figured out a way to incorporate the sauce with the “bolognese” as a delicious dish I was overwhelmed.

In this recipe, I used red lentils in it as they add texture but are not overly earthy like whole lentils. You can use whole brown or green lentils, chickpeas as well or skinned whole red lentils. Add a bit more herbs/flavor to preference depending on the lentils used.

Due to the high amount of protein in lentils, those who follow a vegetarian or vegan diet are highly advised to consume this food because of its high protein content. But even if you’re not vegan or vegetarian, incorporating this food into your diet will give you a plethora of health benefits, as lentils give your body essential vitamins and minerals.

So all of you who think that having a bolognese pasta which is vegan is not possible or delicious, you should challenge yourself and try this recipe out.

Vegan bolognese pasta

Easy to make, gluten-free and vegan sauce which is the perfect replacement for the original bolognese. A great idea to try and experience something new.

Ingredients

  • 50g uncooked gluten-free pasta
  • 1 tbsp olive oil
  • 200g cooked red lentils
  • 1/2 small onion , chopped small
  • 50g shredded carrots
  • 3/4 tsp dried oregano
  • 1/4 tsp garlic powder
  • 100g red bell pepper, chopped
  • 150ml tomato sauce
  • 100ml water

Instructions

  1. Cook the pasta according to instructions on the package.

  2. Wash the lentils, drain and add on to a side. 

  3. Heat a skillet over medium heat, add onion, olive oil, red bell pepper, seasoning, garlic, shredded carrot and a good pinch of salt. Cook for 10 minutes or until golden. Stir occasionally and add water if needed.

  4.  Add in the tomato sauce, lentils and water and let it all simmer until you reach the desired texture. 

  5. Serve the sauce with your pasta and enjoy your lunch.
