Gluten-free Oat Protein Crepes

I love that with these protein crepes, it’s possible to enjoy a decadent brunch while still making healthy choices. They’re also SO versatile, made oil-free, dairy-free, gluten-free and sugar-free. You can keep them sweet, like in this recipe or go with a more savory option and the filling/topping options are endless. It’s just a good, hearty, protein-packed crepe that you can make your own depending on what you’re craving.

Gluten-free Oat Protein Crepes

Oat Gluten-free Protein Crepes are a hit for any breakfast meal. They take just minutes to prepare and are filled with fresh blueberries and yummy Pronella making them irresistible.

Ingredients

For the crepes

  • 50g Bob's Red Mill Gluten-free oat flour
  • 2 egg whites (80ml)
  • 50g banana
  • 1/2 tsp baking powder
  • 100ml vanilla almond milk
  • 2 tbsp protein powder (or additional oats)

For the protein chocolate spread

  • 2 tbsp cocoa powder
  • 100g cream cheese
  • 2 tbsp chocolate protein powder

Instructions

Crepes

  1. Blend all of the ingredients in a blender and let the batter sit for 5 minutes. Heat up a pan on a very low heat. Add in some coconut oil and add in 2 tbsp of the batter. Cook the pancake for 1 minute on each side.

Chocolate cream

  1. Mix all of the ingredients in a bowl and set it into the freezer for 3 minutes (that way you will get a really creamy texture). After 3 minutes, spread it on the pancakes and enjoy in your meal.
