Cookie Dough Blondie Bars (GF/vegan/vegetarian)

This recipe for Cookie Dough Blondie Bars is amazingly delicious!  They are fluffy, moist and delicious – the perfect cross between a cookie and a brownie!

These gooey Cookie Dough Blondie Bars have only 8 main ingredients, are gluten free, grain free, dairy free and easily vegan (depending on your chocolate chips). They’re a great source of plant-based protein and dietary fiber, so have 2-3 for breakfast.

Ingredients

  • 15g coconut flour
  • 20g GF oat flour
  • 100ml liquid egg whites (if vegan use aquafaba instead)
  • 50g banana
  • 100g chickpeas
  • 20g vegan cookie dough protein powder
  • 50ml vanilla almond milk
  • 20g chocolate chips
  • 1/2 tsp baking powder
  • 1/3 tsp xanthan gum

Instructions

  1. Add protein, baking powder, banana, chickpeas, milk and coconut flour into the blender. Mix everything until well combined. Then just take the mixture out and place it into a bowl.

  2. Heat the oven up to 170 degrees. Pour the liquid egg whites into the bowl. Whisk them with a mixer until fluffy. Add in the xanthan gum and mix a little more.  Once they are perfectly stiff, take one by one spoon of the egg whites and add them to the bowl with the other mixture. Slowly combine the two mixtures. Place the batter on to the baking paper in a baking sheet, add the chocolate chips on top and bake the bars for 15 minutes. 

  3. Once they are baked, let them cool in the oven for 30 minutes (with the oven door closed). When they cool down, cut them into 6 bars and enjoy 🙂

Recipe Notes

  • Blondies can be stored in an airtight container for three days (although I’ve never had them last that long).
