Happy summer guys! I am so happy that the hot weather is finally here. So excited for all of the new adventures this summer. I honestly can’t wait. Well even though summer is great for me, I know that some of you just don’t like the heat. You lose your inspiration for cooking and just want to drink fresh juices. The whole thought of cooking is just not bearable. Because of that, I am posting this delicious Berry cookie recipe so that you can bake a batch of something delicious which is great to stay in the freezer so that once you don’t feel like cooking, you can just take them out and eat them 🙂
I mean, who doesn’t love a good berry flavored oatmeal cookie anyway? Especially one that’s made with fresh berries, super easy, and best of all …. TOTALLY allowed to be eaten at breakfast! Speaking of breakfast, these breakfast cookies have actually been our go-to for breakfast over the past month. You see, I made these a while back and froze a bunch. Then all I had to do was just reheat a little in the microwave or toaster oven. The smell alone is delightful.
Even though they are gluten-free and vegan, they are really delicious. Perfect breakfast treat or a got to snack. So let me introduce you to the ingredients you will need:
It is those simple guys! See, gluten-free cookies can actually be a health food. A health food that tastes like a REAL cookie though. Great, am I right?
Berry GF + Vegan cookies
- 100g banana
- 90g gluten-free rolled oats
- 1/4 tsp baking powder
- 1/4 tsp baking soda
- 15g vanilla protein powder
- 20g almond flour
- 180ml almond milk
- 15g coconut flour
- 10g raspberries
- 10g blueberries
Mash the banana. Put the other 5 ingredients together in a bowl. Mix everything with a spoon. Put them in the fridge for 10 minutes.
Heat up the oven to 180 degrees. Put the baking paper on to the baking sheet. Shape your cookies into 9 circles with a spoon. Add the berries on top and slightly press them into the cookie. Bake them between 10-15 minutes, depending on the amount of gooeyness you want them to have.
Once the cookies are cooked, let them cool down on the cooling rack for 10 minutes. Enjoy!
