Peach vanilla pancakes

Do you like tropical flavor as I do? If so you will LOVE these pancakes.

Because many people don’t know how to cook I decided to try and remake my recipes in a way that even THE BEGINNERS can make them. This one is super super easy and you need the ingredients that I am sure you have in your home already (if you live a healthy lifestyle :P).

So let me tell you a little about the whole idea of this recipe. As it is really hot outside I wanted to make a smoothie with some cookie dough so that I can refresh myself, but when I opened the fridge I figured out that I don’t have any food in the fridge. Yeah, I hate when that happens, so I had to turn everything around. I had one peach, some flour, chia seeds, some sweetener, and milk. When I saw that, I decided to make some PANCAKES. 

As I like to combine fruit in my breakfast because of the simple sugars (which I have only in the morning), I decided to add a little touch to these pancakes and I just added in half of the peach I had 🙂

In the end, I created these delicious and super fluffy pancakes because of NO FOOD in my fridge. What a story, isn’t it?

Vanilla peach pancakes

Fluffy and easy vanilla peach pancakes which you can make even when you don't have a lot of ingredients in your kitchen. Filled with those tropical flavors and even better in taste

  • 50g oat flour
  • 30g buckwheat flour
  • 20g almond flour
  • 10g chia seeds
  • 5g coconut oil
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 20g sweetener of choice ( I used xylitol)
  • 1 tbsp apple cider vinegar
  • 1/2 tsp vanilla extract
  • 180ml milk of choice
  • 1/2 peach


  1. Start adding ingredients in a bowl as listed. When you reach the part of adding the vinegar, take a small blender and add in the rest of the ingredients. Blend until smooth.  Add the ingredients from the blender to the bowl with flour. Mix until well combined and let the batter sit for 5 minutes.

  2. Heat up your pan on low heat (in my case is 6 with the electric stove). Add in /4 tsp of coconut oil and let the pan heat up. After a minute or 2 add 1 tbsp of the batter to the pan. Cook the pancake on each side for 40 seconds. Repeat the process with the rest of the batter.

  3. When all of your pancakes are cooked cut the other half of the peach and put it on the top of the pancakes. Add some extra syrup of your choice and enjoy in your breakfast.

    • It can be. I use the whole recipe for myself, but you originally get 6 big pancakes. If you wish, you can separate the recipe into 8 smaller pancakes and serve the recipe for 2 🙂
