300 calorie gluten-free wrap and fries

I bet that when you saw the title of this recipe, you fell on your knees 😛 Yap I know the feeling of amazement when you hear that you can have fast food for only 300 calories!

This whole thing might sound unreal, but it actually is SO REAL. I got a challenge from one of my followers on Instagram to create an Mc Donalds chicken wrap with the fries for half of the regular calories. HUH, sounds fun I guess? Well, I have to say that it wasn’t easy, but I did it.

The fries are made out of parsnips. They are a truly delicious vegetable and are an amazing replacement for potatoes. Trust me, I didn’t think they would taste good but they were actually amazing.

On the other hand, the tortillas were quite a challenge here. As I can only eat gluten-free foods I had to create a wrap which is low in calorie, delicious and still gluten-free. So for the wraps, I used coconut flour because it is the best flour to use in a small amount, but at the end, it actually connects all of the ingredients quite well.

And so on I added the rest of the ingredients which included some chicken, low-calorie garlic sauce, vegan cheese, some greens, and carrot. The whole thing was a HUGE SURPRISE because it turned out better than I have expected it too. That is why I am sharing this recipe with you.

So let’s get started!

  • 15g coconut flour (not flakes)
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp garlic powder
  • 1/4 tsp black pepper
  • 150ml pasteurised liquid egg whites (or 3 egg whites)
  • 150g parsnip cut in slices
  • 1/4 tsp black pepper
  • 80g grilled chicken breast
  • 20g grated carrot
  • hand full lettuce or other green
  • 2 tbsp low calorie garlic sauce
  • 1 slice vegan violife cheese
  • 1/2 tsp garlic powder
  • 1/4 tsp salt

  1. Combine the first 5 ingredients in a blender and let it sit for 5 minutes to combine well. Heat up a pan to low heat and brush it with some coconut oil. When it heats up add in enough natter to cover the whole bottom of the pan. Cook the tortilla until you are able to separate the sides of the pan. Flip the wrap on the other side and cook for another 40 seconds. Repeat everything 5 more times until you use all the batter.

  2. Heat up the oven to 200 degrees. Cut the parsnips int slices and put them in a small bowl. In a small cup combine the garlic, black pepper and salt with some water. Mix well, then add everything to the bowl with parsnips. Roll them into the spice blend.

  3. When done with that, take one by one parsnip stick and place it on to the baking paper. Then place the parsnips in the oven to bake for 15 minutes on one side, and after that flip them on the other side for extra 2-3 minutes.

  4. Take the tortillas and add in the grilled chicken, grated carrot, some garlic sauce, and greens. Wrap everything with aluminum foil or baking paper. Serve the wrap with the fries and extra garlic sauce.
