Double chocolate cherry pancakes

It is CHERRY season guys! Finally! The best time of the year when everything comes to life again. Because cherries don’t last for long, only for around 2-3 weeks and then they are gone, I’ve made these delicious chocolate cherry pancakes to include them in my diet.

They are perfectly fluffy, fudgy and just so simple to make that I think you will become obsessed with them after trying. You need just 4 simple ingredients to make them and only 15 minutes to actually cook them. What can you say about that?

Double chocolate cherry pancakes

Love those dark chocolates which have some small cherry chunks? Well, then you will love this cherry deliciousness

Ingredients

  • 100g banana
  • 90g buckwheat flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 15g cocoa powder
  • 200ml almond milk
  • 2 tbsp maple syrup
  • 1 tsp lemon juice
  • 100g cherries

Instructions

  1. Cut the cherries into small pieces. Blend all of the wet ingredients in a blender. Then add them to the dry ones. Add in the cherry chunks, mix everything with a spoon and set it aside to rest for 10 minutes.


  2. Heat up your pan on low heat and add in some coconut oil. Add 1 and 1/2 tbsp of the mixture to make one pancake. Once you start seeing little bubbles appear, and the sides becoming darker, flip the pancake to the other side. Cook it for additional 1 minute. Then just repeat the whole process for the rest of the batter. 

  3. Serve the pancakes with extra cherries, syrup or whatever you like most 🙂
